Orange Tapioca Salad
I've used rice flour, potato starch, and corn starch with great results, as mixed with some flour.

Orange cream flavored gelatin salad with pineapple and mandarin oranges. A family favorite in the summer.
Ingredients | Tapioca Flour For Frying3 cups water1 (3 ounce) package orange flavored Jell-O® mix1 (3.4 ounce) package instant vanilla pudding mix1 (3 ounce) package instant tapioca pudding mix1 (15 ounce) can mandarin oranges, drained1 (8 ounce) can crushed pineapple, drained1 (8 ounce) tub frozen whipped topping, thawedDirectionsBring the water to a boil in a large saucepan. Whisk in the orange gelatin mix, vanilla pudding mix and tapioca pudding mix. Return to a boil and cook for 1 minute, stirring constantly. Remove from the heat and allow to cool completely. Fold in mandarin oranges, pineapple and whipped topping. Transfer to a serving bowl and refrigerate for at least 2 hours.
